HYDROLYZED WHEAT GLUTEN(HWG) is a product provided by an cnzymatic hydrolysis of vital wheat gluten.HWG softens dought and increases their machinability.It reduces the elasticity but increases the extendibility of doughs.It can be used in :Bread,Cake,Nutrition Rice Flour,Ice Cream,Creamer,Yoghurt,Meat products,Milk powder replacement and beverages.
